The other “seasons,” such as they are, amount to averages between these two extremes.
Depending on where you are in the country, Julie, July will be cold and rainy (Western Cape) or balmy and dry (KwaZulu Natal) – and August quite similar.
The best time of year to visit game reserves like the Kruger National Park, meanwhile, is July-August, when the water is scarce (forcing animals to be more on the move) and the bush is thin (making them easier to see).
